Restauranteur/ Entrepreneur,Louie Lanza , started his passion business "Hot Rod Hotel" in Buchanon, NY, for antique & muscle cars.  He moved his pregnant wife, Joni and son, Frankie to Garrison, NY.  Former Broadway Star Joni found her passion for baking cobblers while spending her pregnancy in Garrison,  while Louie was discovering that their 40 acre farm was covered in sugar maples!  Louie confided in fellow Maple Farmers Patrick and Jackie Cronin of East Fishkill, to develop Lanza Farm into a full fledged Maple Run with 340 taps on site.  During the successful and more importantly "fun" first sugarin' season with the Cronins, Louie encouraged Joni to check out the beautiful line of Maple products that Jackie Cronin was producing.  The Lanza Family's good friend Rosalie Ricci (the ultimate Italian baker) stepped in with her daughter Leanne to help Joni out with the baking.  Before these three Hudson Valley "Chicks" knew it, they were joining forces to become "3 Chicks Sugar Shack", Hudson Valley's Premiere Maple Bake Business.  They re finding their tasty Maple treats well received by the community especially at the Cold Spring Farmers' Market where they also sell Lanza Farm Pure Maple Syrup. 

Louie and Joni have always shared a passion for Organic/Real/Local Foods, and are so excited about sharing Lanza Farm Local Products with the community.  Baking with Maple is so in line with that philosophy, because Maple is nature's ultimate sweetener.  3 chicks Sugar Shack bakes with granulated maple sugar which the ladies make themselves as well as farm fresh eggs from Lanza Farm.
